<p>Fiddledaddy was out of town all week on business. Which meant that I could get away with meals like Hot Dogs, Frozen Pizza, OH YES, YOU CAN EAT CEREAL FOR DINNER.  It also meant that I didn&#8217;t have to fight over the remote with anyone once the children were mercifully asleep.</p>
<p>A hollow victory, because I had to watch <em>Lost</em> all alone.  And <em>Lost</em>, especially 3 hours of it, is likely to lead to restless sleep and nightmares about smoke monsters and VW buses.</p>
<p>Thankfully, he returned bearing gifts.  The children acquired some video games, but I am the one who SCORED.  Fiddledaddy brought me a German Chocolate Cake.  Because nothing says <em>&#8220;I love you and I&#8217;m sorry that I left you all alone with our insane children&#8221;</em> like a German Chocolate Cake.</p>
<p>This is where I would like to tell you that I employed all of my will power and said <em>&#8220;it&#8217;s the thought that counts</em>&#8221; and fed the cake to my family.  Thusly saving my fragile metabolism. But that would be a lie from the pit of hell.  I scarfed that cake down before the dinner dishes were even cleared from the table.  And yes, reluctantly, I shared with the children.  But they did ask in unison, HEY, WHAT HAPPENED TO THE CHERRY ON TOP?</p>
<p>Anyhoo.  When Fiddledaddy is home for dinner, I like to cook a well rounded meal.  And by well rounded, I mean that there is a protein, a complex carb, and some vegetables.  BUT IT HAS TO BE SIMPLE.  I have no time, patience, or fortitude to whip up fancy meals anymore.  (As if I ever did.)</p>
<p>Swedish Meatballs are a favorite with my children.  I got this recipe from my <strong>e-mealz </strong>membership.  I can&#8217;t say enough good things about e-mealz.  They have saved me COUNTLESS hours and headaches by putting together meal plans and grocery lists for me.  <em>(The button is on my left sidebar, and pssst, if you order a membership using the coupon code &#8220;Dave&#8221;, you get a 3 month membership for $12.50, instead of $15.00.)</em> This is an extremely easy recipe, and you can make extra and freeze some for later.</p>
<p><span style="font-size: x-large;">Swedish Meatballs</span></p>
<p><strong><span style="text-decoration: underline;">Meatballs</span></strong></p>
<ul>
<li>2 lb.. Lean Ground Beef</li>
<li>1 Onion, finely chopped</li>
<li>1 Cup Fine Bread Crumbs *</li>
<li>2 Eggs, beaten</li>
<li>1/2 Cup Milk (recipe called for 1 C., I use 1/2 C.)</li>
<li>1 t. Salt **</li>
<li>1/4 t. Ground Pepper</li>
<li>1/2 t. Garlic Powder (or you could use Allspice)</li>
</ul>
<p><span style="text-decoration: underline;"><strong>Gravy</strong></span></p>
<ul>
<li>1 Envelope Dry Onion Soup Mix ***</li>
<li>1 Cup Water</li>
<li>1 T. Flour</li>
<li>1 C. Milk</li>
<li>Salt &amp; Pepper to season</li>
</ul>
<p><em>* In lieu of bread crumbs, I use Rothbury Farms Seasoned Croutons.  They are with whole wheat flour and THEY ARE TASTY.  Gives the meatballs extra flavor.  Just beat them into <span style="text-decoration: line-through;">submission</span> bread crumbs with a kitchen mallet.</p>
<p>** Please note: the recipe called for 2 t. salt.  I tend to use less than what a recipe states, and I think 1 t. is perfect.</p>
<p>*** Also, it&#8217;s hard to find envelopes of Dry Onion Soup Mix that do not contain MSG.  I find them at the health food store.  I&#8217;ll buy several at a time, and then just stick them in the freezer until I need them.</em></p>
<p><span style="text-decoration: underline;"><strong>Meatballs:</strong></span> Mix all meatball ingredients together.  I wear those handy medical gloves so that I can use my hands WITHOUT EVER HAVING TO ACTUALLY TOUCH RAW MEAT.  Form into 1&#8243; meatballs.  Place in a 13 x 9 glass baking dish.  Bake @ 350 degrees for 30 minutes.  Drain off any grease.</p>
<p>Personally, I love the fact that these are made in the oven, and not in a skillet.  But I reckon you could if you felt the urge.</p>
<p><span style="text-decoration: underline;"><strong>Gravy:</strong></span> In a large skillet, combine gravy ingredients.  Stir well.  Add cooked meatballs and simmer for 20 minutes.</p>
<p>I love to serve this over whole wheat wide noodles with a side of green beans.</p>
<p>Come to think of it, a slab of German Chocolate Cake might just complete this meal.  Followed by a brisk 20 mile walk.</p>

<p>I&#8217;m not a gourmet cook.  And I don&#8217;t pretend to play one on my blog.  <em>Saturday Stirrings</em> was born a couple of years ago out of a desire to share easy to fix meals that are easy on the budget and family friendly.</p>
<p>I&#8217;m a decent cook.  I didn&#8217;t start out that way.  When I was first married, the only thing I knew how to cook involved a vat of bacon fat, flour, and a side of cream gravy that served the sole purpose of disguising whatever mystery meat I was serving.</p>
<p>And then I married a man who had rather severe food sensitivities, and wasn&#8217;t really all that fond of anything battered and deep fried in bacon fat.</p>
<p><em>I know.</em> That should have been one of the questions asked during premarital counseling.</p>
<p>And he certainly wished that<em> &#8220;do you know what an iron is and how to use it?&#8221; </em>would have been on his list of questions.</p>
<p>So, maybe it was for the best.</p>
<p>Little by little, I learned how to cook.  And really, it wasn&#8217;t until I discovered a few really wonderful cookbooks, that I began preparing dishes that were actually edible.</p>
<p>But I do not prefer to spend hours and hours slaving over the stove.  I just want my family to think that I did.  For the sympathy factor.  So I&#8217;m always on the lookout for quick and easy recipes that will aid me in keeping my family alive. And fooled.</p>
<p>Hence <em>Saturday Stirrings</em>.  And whenever you all join in, that&#8217;s just the proverbial gravy on my chopped steak.</p>
<p>Some of my favorite recipes have come from you all.  I have typed them up, and even put your names on the page in my recipe book so that I can remember where they came from.</p>

			<content:encoded><![CDATA[<p>Our homeschool group met on Friday at the playground.  Jensen has two little buddies his age that he was hanging with.  They are twin boys that belong to my sweet friend, Staci.</p>
<p><em>Let’s take a moment of silence and hold Staci up in prayer.  Because she has TWO 4 year old boys.  In my book, that would be the equivalent of TWO Jensens.</em></p>
<p>And incidentally, one of her boys is the same one that I inadvertently grabbed and hung onto by the scruff of the shirt, thinking he was mine on a field trip.  While I continued the conversation I was having with another harried mom.  When I eventually looked down and realized that he wasn’t Jensen I was horrified.  So was he.  But his mother has assured me that there were no lasting damaging side effects. This remains to be seen.</p>
<p>Well, this particular boy and Jensen were knee deep in conversation, and we mothers were privy to what interests 4 year old boys because we were sitting just 2 feet away.</p>
<p>The subject that they were enamored with was food.  And I’d like to share the recipe that they concocted together.  I took copious notes, in-between their thigh slapping and squeals of uproarious laughter.</p>
<p><span style="text-decoration: underline;"><span style="font-size: large;"><strong>Flaming Poop</strong></span></span></p>
<ul>
<li>Poop &#8211; Fried (it is important that it be FRIED and not baked)</li>
<li>Topped With Whipped Cream (low fat, I imagine)</li>
<li>Sprinkled on top with MARSHMALLOWS (COLORED ONES)</li>
</ul>
<p>They went on to declare how GOOD their recipe would be!  FLAMING POOP.</p>
<p>What is it with boys?  A joke just isn’t a good joke unless it contains poop.  Hilarious.  And just so we&#8217;re clear, Jensen often enters a room announcing in his best outside voice, &#8220;MOM! I HAD A GOOD SOLID POOP!&#8221; Always a proud parenting moment.</p>
<p>Anyhoo.  After the mothers were sufficiently grossed out, we shooed them off to play.  Because if the truth be known, our Friday afternoon homeschool play group was not formed to aid in the socialization of our children.</p>
<p>IT IS FOR THE WEARY PARENTS.  So that we can have adult sized conversation, and assure one another that we’re not alone in our insanity.  Mostly.</p>
<p>And we also trade notes on inexpensive boarding schools.  Located in a harsh climate.  Just in case&#8230;</p>
<p>What does this have to do with <em>Saturday Stirrings</em>?  Nothing.  Except that I’ve not been able to get Flaming Poop out of my head.</p>
<p>And frankly, I don’t think I’ll be serving anything with whipped cream and marshmallows on top anytime soon.</p>

<p>So, I’ll be working my way through those YUMMY recipes.</p>
<p>This week I received my long awaited new and improved <a href="https://secure.vitamix.com/acb/stores/4/?COUPON=06-003916" target="_blank">Vita-Mix</a> Recipe Book.  And I tried one of the recipes under the “breakfast” section and couldn’t wait to share it with you all.</p>
<p><span style="font-size: x-large;"><strong>Dutch Apple Baby</strong></span></p>
<p>(I did not name this)</p>
<p><span style="text-decoration: underline;"><strong>Apples</strong></span></p>
<ul>
<li>2 T. Trans Fat Free Margarine</li>
<li>3 Large Apples, cored, sliced (with skin on)</li>
<li>1/4 Cup Granulated Sugar (I used Splenda)</li>
<li>1/2 t. Ground Cinnamon</li>
<li>1/4 t. Nutmeg</li>
</ul>
<p><span style="text-decoration: underline;"><strong>Pancake</strong></span></p>
<ul>
<li>3 Eggs</li>
<li>1/2 Cup All-Purpose Flour</li>
<li>1/2 Cup Low Fat Milk</li>
<li>1 T. Low Fat Sour Cream, or Low Fat Plain Yogurt</li>
<li>1/2 t. Salt</li>
<li>1 t. Vanilla Extract</li>
</ul>
<p><span style="text-decoration: underline;"><strong>Apples</strong></span></p>
<ol>
<li>Preheat oven to 400 degrees.  Spray a 9-inch pie plate with a shot of cooking spray.</li>
<li>Sauté sliced apples in butter with sugar and cinnamon until slightly soft.</li>
<li>Transfer to pie plate.</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Pancake</strong></span></p>
<ol>
<li>Add all pancake ingredients into the Vita-Mix container in the order listed and secure lid. ***</li>
<li>Blend on high for 30 seconds, or until well mixed.</li>
<li>Pour over apples.  Bake for 20 minutes.</li>
<li>Garnish with powdered sugar.  (I used sugar free cool whip)</li>
</ol>
<p>***<em>(please note: you can absolutely use a regular blender, or hand mixer for this recipe)</em></p>

<p>After my family devoured this dish, Fiddledaddy asked me if I had taken a picture of it.  Ooops.  It went awfully fast.  A photograph of the empty dish would not have been as effective.</p>
<p>So I did what any self respecting cook would do.  I scanned the picture from the recipe book.  Because IT REALLY DID LOOK LIKE THAT!  Not even kidding.  And I&#8217;m just guessing that those sticks in the middle of it are cinnamon sticks.  I omitted those.</p>
<p>And while it made for a spectacular breakfast dish, I would totally make this for dessert.  For company even.  It was very simple, and extremely good.</p>

<p>But I am not complaining.  I love the colder weather.  Makes me feel like we’re actually experiencing a season other than AFRICA HOT.</p>
<p>And I also have a chance to wear my groovy fur boots out in public.  The same boots that I’ve had to HIDE from my daughters.  They did not inherit my petite feet, and at the ages of 8 and 10 have begun foraging through MY closet in search of cool shoes.</p>
<p>Good luck with that.</p>
<p>One thing that I dearly love about cold weather is comfort food.  No salads for me these last weeks.  Nay.  I’m craving hearty food that warms my innards and make me want to wear my stretchypants.</p>
<p>My mother used to cook dishes like chicken and dumplings.  A meal that warmed the house up with aromatic flavors, and put meat on your bones.  Goodbye metabolism.</p>
<p>Sadly, I have forgotten all of my cold weather cooking roots.  Just yesterday, I stood outside shivering while attempting to grill chicken on my mini-Weber grill.</p>

<p>I haven’t decided what New Years meal tradition to begin with my family yet.  But after our recent stomach flu, I’m pretty sure that we’re not ready for bacon fat yet.</p>
<p>And that saddens me.</p>
<p>However.  When we were under siege, I spent a good deal of time scouring the internet for a potato soup recipe that didn’t include a bunch of contraband ingredients that would be contrary to a bland diet.  I love making quick soup using my <a href="https://secure.vitamix.com/acb/stores/4/?COUPON=06-003916" target="_blank">Vita-Mix</a>, but I wanted something that would simmer on the stove and make the house smell nice.  Because at that point, the house wasn’t smelling so nice.  Just sayin&#8217;.</p>
<p>I found the following recipe at <a href="http://cooks.com" target="_blank">Cooks.com</a> and tweaked it just a little.  It was a hit during our colonary affliction.  And I loved it so much that I made up a batch just today.  And the title of it is &#8220;Grandma&#8217;s Potato Soup.&#8221;  I don&#8217;t know whose grandma, but somebodies.</p>

<p style="text-align: left;">
<ul>
<li style="text-align: left;"><em>1 teaspoon canola oil</em></li>
<li style="text-align: left;"><em>1/2 cup chopped onion</em></li>
<li style="text-align: left;"><em>2 celery stalks, sliced</em></li>
<li style="text-align: left;"><em>1 cup baby carrots, sliced</em></li>
<li style="text-align: left;"><em>4 potatoes, peeled and cubed</em></li>
<li style="text-align: left;"><em>4 &#8211; 4 1/2 cups boiled water</em></li>
<li style="text-align: left;"><em>1 teaspoon chicken bouillon</em></li>
<li style="text-align: left;"><em>potato flakes for thickening</em></li>
<li style="text-align: left;"><em>salt &amp; pepper to taste</em></li>
</ul>
<p style="text-align: left;">
Sauté onions and celery in oil until soft.  Add the water and bring to a boil.  Then add the carrots, potatoes, and chicken bouillon.  Add salt &amp; pepper to taste.  Reduce heat to a simmer, and let the whole thing cook for 1 hour.  Towards the end of the cooking time, add some potato flakes to thicken the broth.  I think I used the equivalent of 4 tablespoons.</p>
<p>Tonight I served the soup with seasoned croutons and shredded mild cheddar cheese on top.  Perfect for cooler weather.</p>
<p>And yes, when Fiddledaddy was out slaving over <a href="http://fiddledeedee.net/2009/12/31/the-malebox/" target="_blank">the stricken mailbox</a>, we were having a warm spell.  Some of you living in the northern states noticed that.  And I&#8217;m sure you&#8217;re not bitter.   But now our weather has taken a turn for the colder.  I couldn’t be happier.</p>
<p>And btw, the brackets that Fiddledaddy used to fix the post worked beautifully.  <strong>SO I WAS WRONG, HONEY.  I CAN ADMIT THAT PUBLICLY.</strong></p>
<p>(I’m still going to paint it, though.  BRIGHT RED, so it may be more easily avoided when operating a 2 ton vehicle.)</p>

<p>It is difficult for me to think about food at this moment, but yet I press on.  Because of this:</p>

<p>I have 3 LARGE Hershey’s Milk Chocolate Bars burning a hole in my fridge.  I bought 2 for the pending campfire smores, and my girlfriend Lisa and her family brought 2 more since they were joining us.</p>
<p>None of the children wanted anything to do with marshmallows that had been set ablaze, so Lisa and I were pretty much the only folks in our party that ate the smores.  And then I let Lisa talk me into keeping custody of the remainder of the chocolate bars, just in case there should occur a hormonal meltdown.  While on vacation.</p>
<p>And really, I hesitate to call that a vacation.  Enjoyable as it was (save for the vomit), I’ve never been more exhausted.</p>
<p>What am I going to do with these remaining 3 large bars of chocolate?  I was hoping you all might have some wonderful ideas.  And I also went online and found the following recipe, which I will be trying in the next week.</p>
<p><span style="font-size: large;"><span style="text-decoration: underline;">Hershey’s Milk Chocolate Cake</span></span></p>
<ul>
<li>1 Hershey&#8217;s Milk Chocolate Bar, (8 oz.), broken into pieces</li>
<li>1/4  cup  butter or margarine</li>
<li>1 2/3  cups  boiling water</li>
<li>2 1/3  cups  unsifted all-purpose flour</li>
<li>2  cups  packed light brown sugar</li>
<li>2  teaspoons  baking soda</li>
<li>1  teaspoon  salt</li>
<li>2    Eggs</li>
<li>1/2  cup  sour cream</li>
<li>1  teaspoon  vanilla</li>
</ul>
<p><strong>Directions:</strong><br />
Combine chocolate bar, butter and boiling water in medium mixing bowl; stir until chocolate is melted. Combine flour, brown sugar, baking soda and salt in large mixer bowl; gradually add chocolate mixture, beating until thoroughly blended. Blend in eggs, sour cream and vanilla; beat 1 minute on medium speed. Pour into greased and floured 13&#215;9 inch pan. Bake at 350 degrees for 35 to 40 minutes or until cake tester comes out clean. Cool completely; frost as desired. 10 &#8211; 12 servings.</p>

<p>What caught my attention about this recipe, was that it came from <em>The Possum Kingdom Lake Cookbook.</em> Possum Kingdom Lake is very close to where my mom grew up in Texas.  And I have it on very good authority that she got into a great deal of trouble at Possum Kingdom Lake.</p>

<p>This is one of my very favorite quick chicken dishes.  It’s the one I will prepare when I’ve thought enough to thaw chicken for dinner, and then all proceeding thoughts have come to an abrupt end.</p>
<p>So by 5:00 I’m staring at a bowl full of raw chicken that isn’t cooking itself, and 4 sets of hungry eyes are staring at me over the kitchen bar, willing me to make something happen in the kitchen.</p>
<p>With a confident air like I meant to make this dish all along, I whip out the following recipe.  A recipe that sounds a little like a 60&#8217;s singing group.</p>
<p><span style="text-decoration: underline;"><span style="font-size: large;">Chicken Breasts with Garlic &amp; Rosemary</span></span></p>
<ul>
<li><em>2 T. Trans-fat free Margarine</em></li>
<li><em>2 T. Olive Oil</em></li>
<li><em>2 Garlic Cloves</em></li>
<li><em>4-6 Chicken Breast halves</em></li>
<li><em>Small Sprig Fresh Rosemary (or 1/2 t. dried)</em></li>
<li><em>Salt &amp; Freshly Ground Pepper</em></li>
<li><em>1/2 Cup White Wine (plus a little extra for the cook)</em></li>
</ul>
<p>Heat the margarine and oil in a large saute pan over medium heat. When the margarine melts, add the garlic and the chicken breasts.  When the chicken is well browned on one side, turn them over and add the rosemary.</p>
<p>When the chicken is cooked well on both sides, add a large pinch of salt and pepper, and then the white wine.  Allow the wine to bubble for about 3 minutes, then lower the heat to a simmer and cover the pan.  Cook for about 20 minutes.  Turn the chicken over a couple of times while cooking.</p>
<p>Then transfer chicken to a serving plate.  Remove the garlic from the pan.  Return the pan to high, and add 2 to 3 tablespoons of water, and scrape up the cooking pieces.  Pour over the chicken and serve.  This dish goes wonderfully with some whole grain pasta and a salad.</p>

<p>Today is the day.</p>
<p>I just love recipes that taste like I&#8217;ve been sweating in the kitchen all day, when in fact, I&#8217;ve wiled away the hours in the kitchen glued to episodes of HGTV&#8217;s <a href="http://www.makeitright.ca/makeitright/index.php" target="_blank">Holmes on Homes</a>.</p>
<p>I want Mike Holmes to build me a house.  If someone should hit me in the head with a stick and I ever agree to build a house again in my lifetime. Amen.</p>
<p><span style="text-decoration: underline;"><span style="font-size: x-large;">Stupid Proof Lasagna</span></span></p>
<ul>
<li>12 Oz. Low Fat Cottage Cheese</li>
<li>2 C. Grated Low Fat Mozzarella Cheese</li>
<li>2 Eggs</li>
<li>1/3 C. Chopped Fresh Parsley (you can substitute 1 Tablespoon dried)</li>
<li>1 t. Onion Powder</li>
<li>1/2 t. Dried Basil</li>
<li>1/8 t. Pepper</li>
<li>4 C. Spaghetti &amp; Meat Sauce (This is actually my <a href="http://fiddledeedee.net/2009/06/27/stupid-proof-crockpot-spaghetti-sauce/" target="_blank">Stupid Proof Crockpot Spaghetti Sauce</a>)</li>
<li>Lasagna Noodles,whole wheat, cooked (approx. 6 noodles)</li>
</ul>
<p>Give a 9”x13” glass pan a shot of cooking spray and set aside.</p>
<p>Boil your whole wheat lasagna noodles for about 10 minutes while you prepare the cheese mixture.</p>
<p>In a large bowl, mix cottage cheese, mozzarella cheese, eggs, parsley, onion powder, basil and pepper until well blended.</p>
<p>Place 3 of your cooked noodles in the bottom of the glass pan.  Spread the cheese mixture over the noodles.  Place the remaining 3 noodles on top of the cheese mixture next.  Then spread the spaghetti/meat sauce on top of the noodles.</p>
<p>Cook covered with foil at 375 for 45 minutes, remove foil, top with a little extra grated cheese, and cook for 15 more minutes.  Let stand for 10 minutes before serving. Mostly because the pan will burn the fingerprints right off of your hand.</p>
<p>I love this recipe.  And I&#8217;ve never ever messed it up.  Not even once.</p>

<p>I attempted to make the legendary Death By Chocolate Cake a few years ago using Splenda instead of the real thing.  He still hasn&#8217;t forgiven me.  I assured him that I would indeed be making the cake, and it would be replete with REAL sugar.</p>
<p>This is an easy cake to make.  But looks and tastes like you slaved over it for DAYS.  I won&#8217;t tell if you won&#8217;t tell.</p>
<p><span style="color: #ff00ff;"><span style="font-size: large;">Death By Chocolate Cake</span></span></p>
<p>Mix in Large Bowl:</p>
<ul>
<li><em>2 Cups Sifted Flour</em></li>
<li><em> 2 Cups Sugar</em></li>
</ul>
<p>Put in Sauce Pan &amp; Bring to Boil:</p>

<li><em> 4 T. Cocoa</em></li>
<li><em> 1 Cup Water</em></li>

<p>Bake @ 350 for 30 minutes</p>
<p>Frosting:<br />
Put in Sauce Pan &amp; Bring to Boil:</p>
<ul>
<li><em>1 Stick Margerine</em></li>
<li><em> 4 T. Cocoa</em></li>
<li><em> 5 T. Milk</em></li>
</ul>
<p>Remove From Heat &amp; Add:</p>
<ul>
<li><em>1 t. Vanilla</em></li>
<li><em> 3/4 Box Powder Sugar</em></li>
<li><em> 1 Cup Chopped Nuts</em></li>
</ul>
<p>Pour over warm sheet cake (in pan)</p>
<p>Stand back and collect the complements.</p>
