You can never have too many chicken recipes laying around, I always say. This is a favorite around the House of Fiddle. A favorite for me because it’s easy, and a favorite for the rest of ‘em because it tastes good.
I like to have my meals pre-planned. My index cards are color coded according to the days of the week. And to each family member’s personal taste.
I’m lying. I like to have my meals pre-planned, but often, I’m lucky to get something thawed in time. This is a meal that I don’t even have to thaw a thing.
I buy the large bags of frozen chicken breasts at Sam’s. When I need to put something together in a jiffy, I pull this one out of my hat. Or freezer, as it were.
4 Boneless, Frozen Skinless Chicken Breasts (halves)
8 Oz. Cream Cheese, Softened
4 T. Margarine, Softened
4 T. Cream, or Half & Half
2 T. Minced Onion
1/4 t. Pepper
1/4 t. Seasoned Salt
1 C. Shredded Cheese (I usually use Mozzarella)
Preheat oven to 375 degrees.
Place chicken breasts in a glass 9X12 baking dish that has been sprayed with nonstick cooking spray. Mix together the cream cheese, margarine, cream, onion, and spices. Spread the mixture evenly over the frozen breasts. Put the cheese on top of the sauce. Bake for about 50 minutes, or until done.
This is great on top of rice or noodles.
Beam some veggies in the microwave, and you’re done with dinner.
