Loose Ends

I didn’t post about my weight loss challenge last week, or even Tuesday, when I was suppose to. I have an excellent reason. I just can’t think of it right now.
So, since this is “Recipe Wednesday” at Tales From The Scales, I thought I’d just
get all caught up in one neat little post. I’m down 2 pounds. It’s something. So, I have 10 more to go. And I’m eating very healthy and seem to have conquered the cravings. Which is miraculous, considering I’m MENSTRUAL. Also, I’ve threatened the life of any family member that brings say, an Oreo, into the house. I cannot be held responsible. Any jury worth their salt would acquit me.
And I even tested Fiddledaddy. Tonight, I discovered, much to my chagrin, that I was out of my favorite Dunkin Donuts brand coffee. I pre-make my coffee the night before, so that all I have to do in the morning is punch the coffee pot button. Fiddledaddy noticed my dismay, and offered to go and procure two bags of delicious ground Dunkin Donuts coffee for me. He said, “I’ll take care of it honey, so that all you have to worry about is your menses.” (I may have complained about my cramps a couple, or 50 times today.) Then he asked the question. “Do you need anything else while I’m out?”
“Yes, a chocolate covered glazed donut.”
He leveled his gaze at me. “No. You’d feel much worse afterward. Can you imagine how sick you’d feel? And I wouldn’t be holding your hair.” He returned 30 minutes later with two bags of Dunkin Donuts fresh ground coffee. And nothing else.
It was just a test, people. I wouldn’t have eaten a donut. Really.
All this talk of food is making me hungry. So, without further adieu, I bring you my favorite low fat main dish recipe.
Garlic Parmesan Chicken Breasts
6 Skinless, Boneless Chicken Breasts
1/2 – 3/4 C. Grated Parmesan Cheese
.7 Oz. Envelope Dry Italian Salad Dressing Mix
1/4 t. Pepper
1/2 t. Garlic Powder
1 Egg, Slightly Mixed
Preheat oven to 400 degrees. Combine cheese, salad dressing mix, pepper, and garlic powder. Dip chicken in egg, then coat with cheese mix. Place in shallow baking dish. Bake for 25 minutes, or until juices run clear when you pierce one breast.
Serves 6. Good one for company. Nice and easy! I got this from Dana Carpender’s “500 More Low Carb Recipes.”

Great job on the 2 lbs. And great job for Fiddledaddy to pass on the donut buying. At my house, the Butler would have bought it and given it to me for fear of retribution from a chocolate starved PMSing mama. He is obviously weaker than Fiddledaddy. I am impressed.

I’m just impressed with your reaction to the “test.” If I was PMSing and my man suggested NOT bringing home a donut even if I didn’t really want it, I would have either:
A-been angry and convinced he thinks I really DO need to lose weight
or
B-cried and been convinced he thinks I really DO need to lose weight

Now this recipe sounds delicious. You can bet I’ll be making it.
Now if I could just get the recipe for the chocolate covered glazed donut.

I don’t know where you live, but around here, “He just needed killin’” IS a valid defense. We’re not Hillbillies; we’re Ozark Americans.
And Dana Carpender’s cookbooks are DA BOMB! Her 15 Minute Low Carb Recipes is my favorite.
Congrats on the 2# loss. I gallumped along behind Robin (Little Bits of Life) on a three-mile walk yesterday. Up the hills. Down the hills. Today, I’m so stiff that I can hardly take a deep breath. She didn’t call me to meet up again this morning. Curious, that.

Enjoyed the blog!! Way to go–my hubby would have brought me home a choc doughnut even if I didn’t ask. That is his language of love everytime he leaves the house he thinks he has to bring home some kind of treat, but lately after I have thanked him but never eaten his treats he brought home for me he has switched to getting himself and the kids a small treat and bringing me home a movie or something that I can watch. Maybe I should start working on him to bring home some jewlery or something….lol!!!

I am going to add your recipe to my menu..as long as I don’t forget where to find the recipe. Sigh. It’s the pits this aging thing. I think I left my mind someplace…but where.

Sound DeeDeelicious ;o) I’ll have hubs make it this week. Way to go on the loss of two pounds of unwanted flesh. Sweet huh? I was amazed when I lost five pounds and then tried to hold a five pound bag of sugar. I cold barely lift it being the weakling that I am, but how on earth did I carry it before? I’m doing much better now with not wanting to eat everything. In fact my family is reminding me to eat something.
And kudos to you Fiddledaddy for passing the test!

Thanks for the recipe! We’re moving next week so I”m not grocery shopping this week (instead I’m using up the stuff I’ve got). Actually, I have everything needed for this chicken. Thanks! My family will be glad to have something actually cooked and not just heated from a can or box tonight!

That looks really good. I will have to try it. Congrats on the 2 lbs (YEAH) that is awesome. My problem is the munchies too! This week we have company in town and I am making a dessert every night – how am I going to resist????

I like my coffee to be ready when I wake up, too. I do the same thing you do EXCEPT I also have the coffeemaker plugged into one of those light timers. It is set to start brewing at 6 a.m. and is ready for me when I get out of the shower. Also, if I miss the alarm, at least the smell of freshly brewed coffee wakes me up!
Congrats on the 2 lb weight loss. I was going to do the Weight Loss Challenge, too, but haven’t had any time to post or write about it. Your recipe sounds great – I’m always looking for new chicken dishes.
